El Junmai Ginjo emblemático de Chikumanishiki se elabora con Miyama Nishiki pulido al 55 %, cuyo aroma limpio y delicado encaja perfectamente con el carácter de alta altitud de la destilería. Elaborado en la cuenca de Saku, en Nagano, a 700 metros de altitud, con agua mineral de un pozo alimentado por la cordillera Yatsugatake, ofrece un sake fresco y refinado con un final refrescante.
