Yamada Nishiki entra en este usunigori (ligeramente turbio) junmai ginjo de Uehara Shuzo, conservando un suave velo de sólidos de arroz para una textura adicional y una dulzura delicada. Prensado mediante el raro método kioke tenbin en barrica de madera equilibrada durante tres días y embotellado sin pasteurización, captura el carácter vivo y pleno de la levadura silvestre cultivada en casa de la cervecería.
