Hiwata Yamahai Junmai Namagenshu Shiboritate es un junmai yamahai recién prensado, sin diluir y sin pasteurizar de la sub-marca Hiwata de Hagino Shuzou, lanzada en 2002 después de que el toji Yohei Sato se graduara del programa de elaboración de la Universidad de Agricultura de Tokio. La marca Hiwata se especializa en métodos de fermentación tradicionales que desarrollan un fuerte sabor de arroz umami, y la edición shiboritate captura el sake en su estado más crudo y enérgico. El agua blanda del manantial Ryodosawa y las variedades de arroz, incluidos Omachi y Miyamanishiki, le otorgan un carácter rico y audaz.
