Hiwata Yamahai Junmai es la expresión emblemática de la marca Hiwata de Hagino Shuzou, fundada en 2002 y dedicada al método de fermentación yamahai que cultiva el ácido láctico natural para un sake con cuerpo y complejo. Nombrado en referencia a un antiguo campo de granos sagrado, la marca Hiwata evoca la conexión elemental entre el arroz, la tierra y la tradición en el corazón de la elaboración de sake en Miyagi. Elaborado con arroz Omachi, Miyamanishiki o Kuranohana y agua de manantial de montaña suave, ofrece un sake con una acidez profunda y umami persistente.
