Emishiki Shuzo, única destilería de Shiga exclusivamente junmai, fundada en 1892 en Koka, fermenta este junmai ginjo sin pasteurizar según el antiguo método kimoto con 100 % de arroz cultivado en Shiga y lo prensa a mano mediante la laboriosa técnica funa-shibori. El carácter fresco nama aporta aromas vivos de cítricos y frutas de hueso, mientras que la acidez natural derivada del kimoto proporciona textura y un final limpio y vibrante.
