Emishiki Junmai Daiginjo Yamada Nishiki Koshikagura utiliza Koshi Kagura, un arroz de sake criado en Niigata, pulido al 50 %, de Emishiki Shuzo en Koka City, Shiga. Fundada en 1892, el uso por parte de esta destilería de Shiga de una variedad de arroz de otra región refleja su espíritu pionero: sin aditivos, con cultivos kimoto y prensado tradicional, produce un Junmai Daiginjo con el carácter floral distintivo del Koshi Kagura.
