Daisekkei (大雪渓), que significa gran valle de nieve, toma su nombre del famoso campo de nieve del Monte Shirouma en los Alpes del Norte cerca de Azumino, Nagano. Fundada en 1898, esta cerveceria utiliza Miyama Nishiki pulido al 49 % y agua de manantial alpino subterranea para este Daiginjo, siendo pionera en el uso de Omachi cultivado en Nagano y ganando reconocimiento IWC por sus expresiones de terroir de montana.
