Daiginjo Shigasakari Kinran utiliza Yamada Nishiki pulido al 40 % de la Omi Sake Brewery en Shiga. Nombrado por el motivo de brocado dorado y azul inspirado en los bosques de arce rojo de Eichizen y el río Aichi, presenta un aroma a melón, pera y flores con una dulzura delicada y una acidez fresca, elaborado con Yamada Nishiki orgánico de Shiga, agua de manantial de las montañas Suzuka y las levaduras Kyokai 1401 y 14.
