El Junmai Daiginjo de Azakura Shuzo usa Misato Nishiki, un arroz para sake desarrollado en la prefectura de Akita, pulido al 38 % para lograr un aroma excepcionalmente delicado y una textura sedosa. Fundada en 1876 en Akita, la destilería está especializada en estilos muroka genshu (sin filtrar, sin diluir) que entregan toda la fuerza del carácter natural del arroz sin dilución.
