Dewa-Sansan-Reis aus der Präfektur Yamagata, auf 50 % poliert, wird durch sokujo fermentiert, um einen junmai ginjo mit kontrollierten ginjo-Aromen und einem sauberen, trockenen ersten Eindruck zu erzeugen. Am Gaumen entfaltet sich apfelartige Süße, gefolgt von knackiger Säure und einem scharfen Abgang, der sowohl kalt als auch warm genossen werden kann.
