Description
Named for the koji dust that starts fermentation, this junmai daiginjo is brewed with Hyogo grown Yamadanishiki rice from the town of Tojo, polished to 40 percent. The deep milling underscores the role koji plays in the brewing process. Kikujin, the color referenced in its name, was historically reserved for high ranking officials and royalty.
