Description

This yamahai fermented junmai genshu, unfiltered and undiluted, opens with sweet, nutty aromas of cashew, pistachio and cheesecake alongside brown sugar and a hint of smoky peat. The palate turns powerfully savory and toasted, evoking buckwheat groats and roasted wild rice, before finishing with notes of dried fruit, hazelnut and aged cheese. It is built to age further at room temperature, developing more complexity over time.
