Kariho setzt auf die traditionelle sakafune-Pressmethode, die im modernen Brauwesen selten ist, sowie mittelhartes Wasser aus der Überschwemmungsebene des Omono-Flusses, um einen sake mit charakteristischer Struktur herzustellen.
