Shinkai Tokubetsu Junmai Yamahai Jikomi 701 von Fujimoto Shuzo in Koka, Shiga, verwendet die Yamahai-Methode, eine vereinfachte Form des alten Kimoto-Ansatzes, der immer noch auf natürlich vorkommende Milchsäurebakterien ohne mechanisches Rühren angewiesen ist. Gebraut mit weichem Brunnenwasser vom Yamamura-Schrein auf dem Brauereigelände, derselben wundersamen Quelle, die um 1766 den Markennamen Shinkai (Vom Göttlichen Geöffnet) inspirierte, liefert er die natürliche Säure und den reichen Körper, die für das Yamahai-Brauen charakteristisch sind.
