Yamada Nishiki, auf 40% poliert, wird im unterirdischen Keller dieser 1865 gegründeten Nagano-Brauerei 10 bis 17 Jahre gelagert, bevor er als Koshu ausgewählt und freigegeben wird. Lange Kaltreifung entwickelt milde, komplexe Aromen aus der ursprünglichen Daiginjo-Basis und ergibt einen reichhaltig geschichteten gereiften Sake.
