Gegründet 1877 (Meiji 10). Im Herzen der Baumwollstraße gelegen, verwendet die Brauerei lokales Quellwasser als Brauwasser. Der Sake-Reis stammt aus Oku-Izumo und Hyogo, und der Sake Yamasan Masamune wird durch das Können von Izumo Mori hergestellt. Aller Koji wird handgemacht. Der Brauer verbringt etwa ein halbes Jahr vor Ort und widmet seine Aufmerksamkeit dem Maischen.
