Junmai Daiginjo aus Yamada Nishiki, auf 40% poliert, bei Yukitsubaki Shuzo in Kamo, Niigata, einer seit 2011 ausschließlich junmai produzierenden Brauerei. Der sake ist ein muroka genshu-Ausdruck (ohne Holzkohlefilterung, unverdünnt) mit einer einzigen Pasteurisierung zur Minimierung von Wärmeschäden, was eine weiche Süße, fruchtiges Aroma und einen klaren, eleganten Abgang ergibt.
