Yamada Nishiki wird für diesen Daiginjo von Kamenoishuzo in Kusu, Oita, verwendet, der mit der gleichen Sorgfalt wie die Wettbewerbseinreichungen der Brauerei hergestellt wird. Unter dem Namen Genkame wird er von Hand in kleinen Chargen mit Kumamoto-Hefe und weichem Kuju-Bergquellwasser gebraut, was einen eleganten, speisefreundlichen Charakter ergibt.
