Einzelbrauer Kato Hiroki, der diese Brauerei 2021 wiederbelebt hat, wendet einen Kimoto-Ansatz an und verfolgt bewusst eine beabsichtigte Adstringenz und Säure, die sich vom konventionellen leichten Trockencharakter Niigatapräfektur unterscheidet, und produziert einen Daiginjo von ungewöhnlicher textureller Komplexität.
