Yamada Nishiki, auf 40% poliert, bildet die Grundlage dieses ginjo von Yamadashoten in Yaotsu, Präfektur Gifu, einer Brauerei, die beim Nationalen Wettbewerb für neues Sake aufeinanderfolgende Goldmedaillen gewonnen hat. Das Sake wird von Toji Uno nach der charakteristischen Methode der Brauerei in kleinen Chargen bei niedrigen Temperaturen von Hand hergestellt.
