Yamada Nishiki, auf 60 % poliert, durchläuft eine aktive zweite Gärung in der Flasche und erzeugt dabei eine lebhafte natürliche Perlage in diesem kassei nigori (sprudelnd-trüben) namagenshu von Uehara Shuzo. In der Nase führen Bananen- und Birnenaromen zu milchiger Reissüße, während lebhafte Kohlensäure und saubere Säure den Abgang zu einer erfrischenden Trockenheit lenken. Flaschen sollten vor dem Öffnen vorsichtig behandelt werden.
