Mit hauskultivierter Wildhefe vergoren und drei Tage lang nach der kioke-tenbin-Holzfassmethode gepresst, trägt dieser junmai ginjo von Uehara Shuzo die charakteristische Fülle und seidene Textur des traditionellen Ansatzes der Brauerei. Die 1862 in Shiga gegründete Brauerei setzt auf natürliche mikrobielle Aktivität statt auf zugesetzte Hefe oder Milchsäure.
