Daiginjo aus Yamada Nishiki auf 40% poliert, gebraut von Iinuma Honke in Shisui, Chiba, während der kältesten Periode (daikan) des Winters mit fast 40 Tagen Niedrigtemperaturfermentation. Der Sake bietet ein fruchtiges Ginjo-Aroma, das an Apfel und Birne erinnert, mit einer zarten Süße, die am Gaumen sauber löst.
