Gebraut von der Tajime General Partnership (Tajimiya) in Asago, Hyogo, aus lokal angebautem Dontokoi-Tafelreis, wird dieser junmai nach der Philosophie der Brauerei hergestellt, dass jedes Reiskorn unendliches Potenzial besitzt. Der Dontokoi-Reis, eine Kreuzung aus Kinuhikari und Hokuriku 120, verleiht dem sake ein ausgewogenes Umami und eine Säure, die sich beim Erwärmen weiter entfalten.
