Dies ist unser zweiter Dai Ginjo (unser erster entstand in Zusammenarbeit mit Nanbu Bijin, einer Brauerei in der 6. Generation). Dai Ginjo gilt aufgrund des Aufwands, der Zeit und der Kosten, die in seine Herstellung fließen, als superpremium Sake-Stil. Wir haben 100 % Sake-Brau-Reis (Yamada Nishiki), eine einzige moderne Hefe verwendet und die Fermentation nicht über 11 Grad Celsius steigen lassen. Das Ergebnis soll delikat und luxuriös sein.
