Das Junmai Daiginjo von Azakura Shuzo verwendet Misato Nishiki, einen in der Präfektur Akita entwickelten Sake-Reis, der auf 38 % poliert wird, um ein außergewöhnlich feines Aroma und eine seidige Textur zu erzielen. Die 1876 in Akita gegründete Brauerei ist auf Muroka Genshu (ungefiltert, unverdünnt) spezialisiert und liefert die volle Wirkung des natürlichen Reischarakters ohne Verdünnung.
