Established in 1847 in Kyotango, northern Kyoto Prefecture, TAKENO Sake Brewing produces Yasakatsuru as its generational flagship, currently crafted by sixth-generation toji Yoshiki Yukimachi alongside his brothers under their father's guidance. The brewery maintains close ties with local contracted farmers, sourcing regional rice for a dedicated variety-specific lineup called Kurabu, and focuses on maximizing the freshness and natural character of each rice variety rather than conforming to fixed style conventions. Yasakatsuru is noted for its vivid aroma and crisp, clean finish.
