Waza is a sake brand from Kitazenshoten, a brewery founded in 1716 in Imajo, a historic post town on the Hokuriku Kaido road in Fukui Prefecture, where famous literary and religious figures once traveled on their journeys through Echizen. The brewery draws naturally soft water filtered through silicate bedrock from surrounding mountains and uses no additives in its low-temperature, extended fermentation process, producing sake with a ginjo character, restrained acidity, and a clean, dry finish suited to seafood.
