Sutera is the signature brand of Inaba Shuzo, founded in 1867 at the foot of Mount Tsukuba in Ibaraki Prefecture, where pure spring water from the mountain has been the foundation of the brewery's sake for 13 generations. The current husband-and-wife team named the brand Sutera after spending many late nights perfecting it, choosing the Latin word for celestial star, and the sake is made using the shizuku method, allowing clear sake to drain from hanging bags under the gentle pull of gravity rather than mechanical pressing. Head brewer Nobuko Inaba, one of the rare female toji in Japan, produces Sutera in strictly limited quantities, entirely by hand.
