SOTO is an award-winning premium sake brand produced in Niigata Prefecture, Japan, founded by Billy Melnyk, a former executive at Bacardi and Grey Goose who spent years developing a sake rooted in Japanese heritage while appealing to an international audience. The brewery has been operating for over 70 years and draws brewing water from the mountains of Niigata, with the brand name meaning outside in Japanese, celebrating the earth's natural elements. SOTO has expanded through high-profile collaborations, including a limited-edition series with fifth-generation brewer Tomonobu Mitobe of the respected Yamagata Masamune brewery, and counts tennis star Naomi Osaka among its investors.

I wasn’t a fan of this one, but I prefer Junmai Ginjo. I did sense some spice in this sake, but I don’t think it had enough depth for me (but I prefer Nigori)
on SOTO Junmai Sake →RPR: 50%. Tried it chilled and room temperature. I found it to have a strange taste on the front end that I didn’t love in either temperature but chilled was a little better.
