Shutendouji is a full-bodied dry sake from Hakurei Brewing, the community-based Tango Kyoto brewery founded in 1832, and stands as one of its highest-volume flagship expressions. The sake is produced using the yamahai brewing method, which relies on naturally occurring lactic acid bacteria to develop a complex mash that amplifies the umami of the rice rather than suppressing it.
