Shutendouji

Shutendouji is a full-bodied dry sake from Hakurei Brewing, the community-based Tango Kyoto brewery founded in 1832, and stands as one of its highest-volume flagship expressions. The sake is produced using the yamahai brewing method, which relies on naturally occurring lactic acid bacteria to develop a complex mash that amplifies the umami of the rice rather than suppressing it. Brewed in vats and buildings dating to the Tenpo era, Shutendouji carries the historic character of a brewery whose tools are themselves designated tangible cultural heritage.
