Founded in 1921, Kitashouji Shuzoten is the only sake brewery in Izumisano City, Osaka Prefecture, operating within a Japan Heritage-designated area of Hine-no-sho near Kansai Airport. Under the motto good sake little by little, a team of five employees handles every stage of production by hand in small batches, honoring the traditional Nanbu Touji technique. Shonosato has received gold and merit prizes at the Annual Japan Sake Awards, with the brewery sourcing Yamadanishiki and other sake rice varieties grown locally in Osaka.
