Tsukasa Botan was founded in 1603 in Sakawa, Kochi, initially in service to the Tosa domain's top advisor, and its current name was bestowed by Meiji-era statesman Count Tanaka Mitsuaki, a native of Sakawa who loved the sake deeply. The brewery draws its water from the Niyodo River, recognized as the clearest river in Japan. Senchuhassaku is the brewery's signature junmai brand, brewed to reflect Kochi's traditional preference for dry, clean sake.
