Onozakura is a craft sake brand from the remote Ura Kiso mountain area near Nakatsugawa in Gifu Prefecture, produced at Yamauchi Shuzojo. The brand owes its continued existence to a passionate local sake retailer who stepped in to save the brewery from closure when no successor could be found, taking on the brewing role without prior experience. Designed as a true jizake, Onozakura is traditionally paired with local mountain cuisine including game, freshwater fish, and wild vegetables from the surrounding highlands.
