Mutsumidori is produced at a brewery with roots in Hirosaki, Aomori Prefecture, in the shadow of Mt. Iwaki, a volcanic peak known locally as the Mt. Fuji of the Tsugaru region. The brewery began as a shubo manufacturer supplying yeast starters to breweries across the Tsugaru area before shifting to full sake production in 1904. In 2016, the operation became the first brewery in Aomori Prefecture to earn kosher certification and transitioned to a pure rice brewing model with no added brewer's alcohol.
