Mizunokirameki is brewed by Senryu Shuzo, a brewery founded in 1688 in Emukae Town, Sasebo City, Nagasaki Prefecture, making it one of the oldest continuously operating sake breweries in Kyushu. The brewery has passed through 13 generations of the Yamashita family, and its original yeast brewery building, a surviving example of Edo-period architecture, is designated a tangible cultural property of Nagasaki Prefecture. Sake is crafted here using time-honored methods and the pure local water of the Nagasaki highlands.
