Niseko Shuzo, established in 1916 in Kutchan, Hokkaido, was reportedly the first brewery in Hokkaido to sell sake without water adjustment, setting an early standard for purity in the region. Meisuikyogoku is brewed using spring water from Kyogoku Town, recognized as one of Japan's hundred finest waters, carried 120 kilometers by local sake enthusiasts each year. The brewery's location in a heavy-snowfall zone enables the low-temperature fermentation ideal for producing clean, soft sake.
