Mahoto

Mahoto is a label from Shinkame Brewery in Hasuda, Saitama Prefecture, a brewery founded in 1848 that in 1987 became the first postwar brewery in Japan to convert entirely to junmai production. The sake is made with organically cultivated Gohyakumangoku rice grown using only the brewery's own compost, resulting in a full-bodied and vigorously flavored junmai with clean finish. All koji work at Shinkame is performed using individual koji trays, one of the most labor-intensive traditional methods in the craft.
