Kitajima Shuzo was established in 1805 in Konan City, Shiga Prefecture, along the old Tokai Road between two historic post towns, and produces Kitajima as a line dedicated entirely to junmai sake made with kimoto starter culture. The brewery sources nearly all its rice from Omi, the historic name for Shiga, and uses soft Suzuka mountain-range spring water that surfaces within the brewery grounds. Kitajima splits into two clear styles: kimoto-aged sake intended for warming, and unfiltered raw sake best served chilled.
