Raifuku Shuzo, founded in 1716 in northern Ibaraki Prefecture, has been producing sake for over 300 years on the slopes beneath the Tsukuba mountains, drawing on exceptionally pure spring water from that range. The brewery is particularly known for its pioneering work with Hanakobo, a technique of culturing yeast from flowers, which yields a wide variety of distinctive flavor profiles across its range.
