Shotoku Shuzo, founded in 1645 and later relocated to Kyoto's Fushimi district to access its celebrated underground spring water, brews Kaorisuzuka as part of a commitment to pure junmai sake made from nothing but rice, koji, and water. The brewery draws its brewing water from more than 70 meters below the plant, sourcing the famously soft Fushimizu spring that has defined Fushimi sake for centuries.
