Kamikawa

Kamikawa Taisetsu Sake Brewery was established in 2017 at the foot of the Daisetsuzan mountain range in Kamikawa Town, Hokkaido, using spring water at approximately 7°C and three Hokkaido-grown sake rice varieties including Suisei and Kitashizuku. Founded as a regional revitalization project in one of Japan's coldest brewing environments, where winter temperatures drop to minus 20°C, the brewery produces small-batch handcrafted sake without large tanks. The resulting sake is known for its soft mouthfeel and clean finish, shaped entirely by Hokkaido's water and land.
