Morito Shuzo, the Tochigi Prefecture brewery behind Juichimasamune, ferments its sake using a wild ginjo yeast cultivated from cherry blossoms and produces its signature range with Yaita-grown local rice, water, and traditional craft entirely sourced from the surrounding region. The brewery also uses a natural yeast derived from apple blossoms in select expressions, bringing an additional layer of aromatic depth to the lineup. Juichimasamune is designed to be enjoyed multiple ways, whether straight, on the rocks, or with hot water, reflecting the brewery's straightforward commitment to versatile, honest sake.
