Ariga Jozo, established in 1774 in Shirakawa, Fukushima, traces its origins to an order by the Echigo Takada domain to brew sake for the castle town's administrative outpost — the brand name Jinya (meaning 'domain office') directly references this founding story. After returning from research at Tohoku University following the 2011 earthquake, the current toji Yuijiro Ariga shifted production entirely to junmai sake and introduced a 'domaine' philosophy focused on expressing the character of Fukushima's land. All ingredients in the Jinya lineup are sourced from Fukushima Prefecture, including the Yume no Kaori sake rice and proprietary local yeast.
