Iwamiginzan is produced by Ichinomiya Shuzo, a brewery located in Oda City, Shimane Prefecture, adjacent to the UNESCO World Heritage Site of Iwami Ginzan, the historic silver mining district that once drove Japan's economy. The brewery was founded approximately 120 years ago and uses water filtered through the foot of Mt. Sanbe, known for its mineral-rich profile. Ichinomiya Shuzo has revived the rare Hachitanryu sake rice variety and continues to develop new expressions, including sparkling sake and floral liqueurs, alongside its traditional junmai lineup.
