Hakuchogura is the premium line of Echigozakura Shuzo in Niigata Prefecture, its name evoking the white swans that take flight from nearby Lake Hyouko. The brand was built around the concept of daiginjo as everyday sake, and the brewery's purpose-built facility can produce up to one million bottles of ginjo-class sake annually using traditional seiro-steaming and sealed fermentation tanks designed to preserve delicate aromatics.
