Buyu
Buyu traces its roots to the late Edo period, when Yusuke Hosaka from Echigo established a brewery in Yuki, Ibaraki Prefecture, a castle town with a long samurai heritage that gives the brand its name. With more than 150 years of history, the brewery preserves traditional three-season brewing from September through April while adapting to each generation of sake drinkers. Their lineup spans junmai ginjo made entirely from Ibaraki-grown rice to the conceptual BuyuCycle series, which pairs bicycle themes with natural microbial cycles and local production.
