Biden is produced by Mii no Kotobuki Co., Ltd., a small, family-operated brewery established in 1922 in Fukuoka Prefecture on the banks of the Koishiwara River, surrounded by rice fields and the Mino mountain range. The brewery applies the traditional yamahai fermentation method and ages the sake at room temperature to develop a distinctive full-bodied profile with caramel, honey, and almond notes typical of matured sake. Toji Tadatsugu Inoue has guided production since 1996, and the Hojo Biden Yamahai Junmai is brewed with local Itoshima Yamada Nishiki rice.
