The Experience

Just a one-minute walk from Shimbashi Station, Shimbashi Craft Sake Brewery UBU is tucked away on the basement floor of the New Shimbashi Building. With only seven counter seats, the restaurant has an intimate, relaxed atmosphere where you can focus on the food, the drinks, and the interaction across the counter.

What makes UBU especially distinctive is its in-house brewery. Doburoku and craft sake are brewed right inside the restaurant, while the menu is built around sushi and dishes designed to pair naturally with alcohol. It feels like a small hideaway for guests who want to explore both seasonal Japanese cuisine and sake in a more personal setting.

The Omakase Course

The seasonal omakase course is ¥9,900 (tax included) and includes around 20 items. The menu changes depending on the ingredients available that day, with fresh seafood sourced from Toyosu and Tsukiji appearing throughout the meal.

The course moves through appetizers, sashimi, sake-friendly small dishes, seasonal nigiri, steamed dishes, and additional specialties. Listed highlights include steamed abalone with liver butter sauce and UBU’s signature uni-and-meat gunkan, followed by a hand roll, red miso soup, and dessert.

The course is available from 18:30 to 21:30, with an approximate dining time of 2 hours and 30 minutes.
