Yuzu Marinated Japanese Yam

If you love refreshing Japanese side dishes, this yuzu marinated Japanese yam is a must try. The crisp texture of the yam pairs beautifully with the bright aroma of fresh yuzu, creating a light yet flavorful dish.

With only a handful of ingredients and almost no cooking required, it's perfect as a make ahead appetizer, a palate cleanser, or a healthy snack alongside your favorite Japanese meal.

What you'll need

  • 15 to 20 cm Japanese yam (nagaimo), peeled and diced into 1 cm cubes
  • Zest of 1/2 yuzu
  • 1 tbsp rice vinegar
  • 1 tsp white dashi
  • 2 tsp soy sauce
  • A pinch of salt
  • Fresh yuzu juice to taste

How to make it

Step 1

Peel the Japanese yam and cut it into 1 cm cubes. Thinly slice the yuzu zest into fine strips.

Place the yam and yuzu zest in a zip top bag. Add the vinegar, white dashi, soy sauce, salt, and fresh yuzu juice. Seal the bag and gently massage until evenly coated.

Add the Japanese yam.
Marinate.

Refrigerate for about 30 minutes before serving.

Tips

  • Fresh yuzu provides the best aroma, but bottled yuzu juice can be used when fresh fruit is unavailable.
  • Letting it marinate a little longer creates a deeper flavor while keeping the texture crisp.
  • Sprinkle toasted sesame seeds or bonito flakes before serving for extra flavor.
